Cookie Dough Bites Recipe

cookie+dough+bites2This was a new recipe I just tried out recently with Emily, it was another yummy success so I thought I’d post it up for you guys to find and try out. It’s a great idea for in the summer when you want it done quick, don’t want to turn on the oven and made with minimal mess. (Unless you’re just a messy baker then I can’t say if it helps or not there) Hope you guys have fun making this one, the snack afterwards should be even better.

  • 1 cup all-purpose flour
  • 1/8 tsp salt
  • 1 tbsp butter or margarine (melted and cooled)
  • 1/4 cup unsweetened applesauce
  • 1/2 tsp vanilla extract
  • 1/2 cup brown sugar
  • 4 tsp semi-sweet chocolate chips

  • Whisk together flour and salt in a small bowl
  • In a separate bowl stir together butter, applesauce and vanilla until thoroughly combined. (smear in clumps formed along the sides)
  • Add in the two mixtures together until smooth
  • Fold in chocolate chips (I’ll be honest we didn’t measure at all for this it was completely guess because you can never have too much chocolate)
  • Option: If the dough is too sticky to shape, refrigerate for 20-40 minutes (we didn’t need to though)
  • Line a baking sheet or large plate with wax paper and roll the cookie dough into little balls (around 32) roughly 1-1 1/2 teaspoons of dough
  • Place on the wax paper until ready to serve

  • Leaving in the fridge until then is also a nice option, I liked it better when they were cold
  • Also just for fun we melted down some milk chocolate chips and added some extra on top of them
  • You are also not supposed to try to bake these cookies, on the recipe we found it says they’ll come out dense and flat because of no use of baking powder
  • Store in the refrigerator in a sealed container

So, that’s it. Have fun making this quick little treat up and rolling them is probably the best part ’cause you get to lick your fingers after. As an added bonus it’s egg free so woohoo

Until next time,
